Serve it properly cold, 6 to 8 °C: three or four hours in the fridge, or twenty minutes in a bucket with ice and water (ice alone chills far worse). Use a white-wine glass rather than the old flat coupe: the bubbles last longer and you can actually smell it. Hold the cork and turn the bottle, not the other way round, and keep it quiet: the loud pop is showy and costs you gas. Store the bottle lying down in the dark until the day, and if any is left, use a cava stopper and refrigerate.
