Marqués de Murrieta has been making Rioja at the Ygay estate since 1852, and its Reserva is the house calling card: Tempranillo with Graciano, Mazuelo and Garnacha, around two years in American oak barrels and enough time in bottle for the wood to stop tasting like wood. Given with flowers it works by contrast: the bouquet is seen on arrival, the wine is opened on the right day.

Serve it between 16 and 18 °C, never at room temperature in August: in Mallorca that means 28 °C and the alcohol takes over. Half an hour in the fridge before opening sorts it. Open it early — thirty or forty minutes, or decant it — because a Reserva needs to breathe. If it is not opened that day, keep the bottle lying down, in the dark, away from temperature swings; the cork needs to stay damp. It pairs with lamb, rice dishes, aged cheese and grilled red meat.
