The Swiss house Lindt has been refining one technique since 1845 — conching, grinding cocoa for hours until it turns silky — and the result is this melting centre wrapped in a thin shell of milk chocolate. The instructions are unusual for a chocolate: do not bite it. Hold it still and wait. It dissolves by itself, and those ten seconds are the whole product.
